Cranberry Margarita - I somehow think these are increadibly healthy at this time of year! haha
Makes around 10 to 14 Margarita's
Rub the rim of the glasses with cranberry juice and then dip in sugar!
500ml of cranberry juice
150ml of sugar syrup (depending on how sour the mixture is)
100ml of fresh squeezed lime juice
400ml of tequila
200ml of Grand Marnier (or just plain orange juice, if you prefer)
250 grams of frozen cranberries
Ice
10 lime wedges for garnishing
30 frozen cranberries for garnishing
1. Put 400 grams of caster sugar into a pan, cover it in a 400ml of water, bring to the boil, reduce and heat slowly to disolve the sugar, then let it cool. This is the sugar syrup. Store left over syrup for other cocktails. If you don't have time for this step, pour sugar straight into the blender for each batch, mix, then keep tasting until you are happy with the sweet / sour balance. [Sugar syrup - Mix equal quantities of water and caster sugar together in a small saucepan. Bring to the boil and simmer for 2 minutes. Allow to cool and store covered in the fridge for up to 2 weeks].
2. Mix all the ingredients except the ice and the garnish in a pitcher and mix it up.
3. Then pour 500ml of mixture into a blender and fill the blender up with ice to 800ml. Blend until slushy. Taste, if too sour, add in more sugar syrup.
4. Pour in to glasses and garnish with two or three of the whole frozen cranberries and a lime wedge.
5. Repeat with mixture. Makes a minimum of three blender batches.
